Stevens Pass

This Blend of South American, Central American, and Indonesian Coffees are roasted to bring rich oils to the surface. This creates a balanced, vibrant coffee with a deep, full bodied character. The earthy, intense flavors of Sumatran coffee are accented by our French roast, which adds layers of smoky, bittersweet richness.

Sumatran Mandheling

Full bodied, with a rich dark chocolate bottom. This coffee has low acidity and a pleasant smoky finish. It is very clean tasting for such a rich Sumatran. Fair Trade and Fully Organic.

Skykomish Sunrise

This coffee exhibits a dry, nutty flavor and smoothness with a well balanced and pleasing aftertaste. Skykomish Sunrise is a full bodied coffee with a rich cup and medium acidity. This coffee is a product of Sumatra and, thus, exhibits, much of the full bodied and earthy characteristics of Indonesia’s coffees. Fully Organic and Fair Trade.

Troublesome Creek

This wonderful organic coffee is roasted just until the first aromatic oils push through. Medium-heavy body, complex fruitiness, mildly balanced acidity. It comes from the perfect blend of Indonesian, Central, and South American coffees and is brought to life with a medium roast to bring out the "nutty" sweetness of the beans. Troublesome Creek a great name for our most popular medium coffee. Fair Trade and Fully Organic

Quattro e Uno

Quattro e Uno (Four and One). That is the name for our buttery sweet espresso. We came up with the name as a clever way to describe our famous five bean espresso blend. Quattro e Uno creates a unique caramel and chocolate flavor profile when combined with milk and produces a golden brown crema unlike any that you have ever seen. Quattro e Uno is roasted medium dark in the northern Italian tradition to bring out the caramelized sugars and sweetness of the syrupy Sumatran beans while showcasing the fruity floral notes of the Ethiopian Yirgacheffe. Fully organic and Fair Trade.

Swiss Water Process Decaf

Decaffeinated using the Swiss Water process. No Methelene Chloride is used. This coffee is roasted to the medium dark stage in order to bring out a rich chocolaty flavor with a slight buttery note. Fair Trade and Fully Organic.

Bolivian

Overall, this coffee is delicate and bright, the classic clean cup, and aromatically sweet. It has subtle fruit flavors, like pear, apple, apricot, tangerine, and lemon. It can develop roast flavors that are malty, mild chocolate, nutty, caramelly and honeyed. The best flavors really emerge as the cup cools, and doesn’t diminish but actually grow in intensity. Hazelnut

We have our Hazelnut flavoring custom made for us in Hawaii to match the profile of our 100% organic Ethiopian beans. Medium roasted to produce a light and lively flavor, aroma, and body with a hint of Hazelnut. Fair Trade and Fully Organic

Smiling Dog

We started with Tanzanian Peaberry, and then added some Ethiopian Yirgachefee and Indonesian Java to round out the profile. This blend is roasted medium to accentuate the earthy Java beans and full bodied Monsoon Malabar that we add after the roast. Of course it’s Fair Trade and Fully Organic

Barking Frog

Barking Dog Exemplifies what a medium coffee should be; light body, caramelly sweetness, with a very floral character. On the palate it is medium bodied with hints of vanilla and jasmine. This coffee was developed over a period of 18 months and is a prized Vinaccio secret. Fully Organic and Fair Trade.

Costa Rica Tarrazu

Tarrazu coffee is a very clean and balanced cup, with bright acidity, extraordinary body, tremendous flavor, depth, and a fresh snap. This coffee has bright citrus or berry-like flavors and the acidity fades into chocolate or spice flavors in the aftertaste. Fully Organic and Fair Trade

Uncle Billy's Red Eye Remover

Uncle Billy asked me to make him a blend for him and his trucker buddies over in West Virginia. We blended this coffee to be higher in caffeine content than our other dark roasts while maintaining the full body and depth expected from a French Roast. Fair Trade and Fully Organic
